No-Tomato Salsa (Peppers, Corn, and more)
Ingredients:
1 red bell pepper
1/2 a can of sweet corn
2-3 cloves of garlic, minced
1/3 to 1/2 an onion
1 Jalapeño, de-seeded
2 Tbsp olive oil
1-2 tsps each lime & lemon juices
Handful of cilantro (to your preference really)
Directions:
Dice up the bell pepper, onions, and jalapeño. Add them to the blender/food processor, and add in the corn as well. In a small pan, sauté the garlic in the olive oil for a few minutes over medium heat. Add in the garlic, juices, and cilantro in and purée until desired consistency. Add in additional spices or veggies to your desire if needed.
Serve as a side dip or with some chips. :)
This salsa will have a very peppery taste to it obviously, but overall it is very delicious, especially when served warm. Color will also vary sometimes I’ve found like the picture below being more yellowish, compared to my latest salsa was more orange.
